I really need some help here. In 3 weeks my wife and I will have been married for 5 wonderful years. On our first anniversary we agreed that we would follow the anniversary charts to help us give each other the appropriate gift. If you know anything about the 5th year anniversary gifts, you will see that this is a very hard year to choose an appropriate gift. I could really use some advice. Oh ya, my wife hates the color blue, so that knocked sapphire out of the water.

It is not a common practice for couples to use the Anniversary charts anymore, so I am pleased that you are carrying on with the old tradition.
I am certain that you are aware of both charts, the TRADITIONAL and the MODERN Anniversary Gift Charts.
The 5th Year Traditional Anniversary Gift would be to give her something in Wood. My ideas would be a lovely jewelry box, photo frame with your favorite photo in it, or a sentimental wooden plaque.
The 5th Year Modern Anniversary Gifts would include something Sapphire or Silverware. Most women do not like to receive utensils or appliances as gifts. I would not advise going this route unless it is a very expensive set or she has asked for it specifically.
You mentioned that your wife is not fond of blue. The Traditional sapphire is known as being a dark blue color. However,there are other sapphire colors such as White, Yellow, and Pink. You can check for those at your local Jewelry store or online.
